Ingredients

4-6 servings
  1. Tart shell:
  2. 1 1/4 cupsall-purpose flour
  3. 1/2 cupchilled butter [cubes]
  4. 1/4 cuppowdered sugar
  5. 1/4 cupchilled milk
  6. Cheesecake filling:
  7. 200 gsoftened cream cheese
  8. 3/4 cupmango puree
  9. 2 tbsppowdered sugar
  10. 1/4 cupwhipped cream
  11. whipped cream for decoration
  12. diced mango for decoration

Cooking Instructions

    Tart shell: In a bowl, add the flour, sugar. Add in cubes of chilled butter & rub the butter into the flour till it turns crumbly.

    Add in the milk gradually while kneading till a soft dough is formed. Wrap in cling wrap & refrigerate.

    Roll it out on a flat surface & place it in a 9 – inch tart pan. Press the sides and base firmly & cut off the excess dough. Poke holes in the base with a fork.
    Place a piece of parchment paper & add any beans [BLIND BAKING].

    Bake in a preheated oven at 180 degrees Celsius for 15-18 minutes or golden brown.

    Filling: Add softened cream cheese in a bowl & whisk till smooth. Add the mango puree & sugar, whisk till mixed.
    Add 1/4 cup whipped cream & mix till smooth.

    Assembly: Demold the tart once cooled & remove the beans and parchment paper.

  7. 7

    Scoop out the filling in the tart & spread evenly with an offset spatula.
    Pipe the remaining the whipped cream onto the tart. Finish with fresh mango piece, sprinkles & gold dust (optional).
