Ingredients

  1. For Eggless Strawberry Muffins:
  2. 1 cupFull Fat Milk (Gokul)
  3. 1 tspLemon Juice or Vinegar
  4. 1 cupOrganic Sugar, powdered
  5. 1/3 cupOlive Oil
  6. 1 1/2 cupSelf-Raising Flour
  7. 1 1/2 tspBaking Powder
  8. 1/2 tspBaking Soda
  9. 1 cupFresh Strawberries, chopped
  10. Topping:
  11. 1/4 cupChopped Strawberries
  12. For Strawberry Buttercream Frosting:
  13. 70 gAmul Butter, softened
  14. 1 1/2 cupPowdered Organic Sugar, sifted
  15. 1 tbspVanilla Extract
  16. 2 tbspWhipping Cream
  17. 1/4 cupFresh Strawberry Purée

Cooking Instructions

Total Time: ~45 minutes

    For Eggless Strawberry Muffins:
    • In a large mixing bowl, add milk and lemon juice. Whisk and let it sit for a few minutes to curdle.

    Add powdered sugar and whisk until combined.

    Add olive oil and mix well.

    Sift in self-raising flour, baking powder, and baking soda. Gently fold to combine.

    Add chopped strawberries and mix gently. The batter is ready.

    Line muffin moulds with paper liners and fill them three-fourths full with batter.
    • Sprinkle chopped strawberries on top.

    Bake in a preheated oven at 180°C for 25 minutes or until a toothpick inserted in the center comes out clean.
    • Let them cool completely before frosting or enjoy as is!

    For Strawberry Buttercream Frosting:
    • In a large bowl, beat softened butter with an electric beater on medium speed for about 5 minutes until fluffy.

    Gradually add powdered sugar in portions, beating on low speed.

    Add vanilla extract and fresh strawberry purée, beating until combined.

    Pour in whipping cream and beat on high speed for 3 minutes, then on low speed for 2 minutes until smooth and fluffy.
    • Your Strawberry Buttercream Frosting is ready! Use it to top muffins, cakes, or even hot cocoa.
    • Store leftovers in an airtight container in the fridge for up to 3 days.
