April's Cake Donut Muffins w/ Buttercream Frosting
Cooking Instructions

Preheat oven to 350°

In a large bowl combine sugar and butter, blend until creamy.

Mix in eggs.

Add all dry ingredients: flour, baking powder,salt, nutmeg, and cinnamon. Blending well, mix will be slightly stiff.

Add milk and mix until smooth.

Spray muffin pan with non stick cooking spray, using an ice cream scooper spoon in mix (filling them 2/3 of the way).

Place in oven and bake for 15 minutes.

When finished and out of the oven, remove donut muffuns from pan and completely cool.

For the frosting: In a medium sized bowl combine confectioner's sugar, butter, vanilla extract, and milk. Mix well until texture is nice and smooth. If needed, add a splash of milk to desired consistency. Add food coloring if desired.

When donut muffins are completely cooled, dip the tops into the frosting until well coated and sprinkle with desired topping.

Serve with your favorite cup of coffee or a nice cold glass of milk. Enjoy!

This recipe is fairly similar to my chocolate cupcake recipe except that I made some modifications. The buttercream is easy but still hard. You need to follow the directions for everything or it won’t work. I’ve tried this recipe twice and once it didn’t work because it was too clumpy.
