Oats N Dates Purée Cake

Hello folks, today I am here with a recipe for you all. I have been wanting to make a cake with dates. Dates have good healthy qualities in them and I wanted to include them in my kids diet , as then won't eat it normally.
This cake turned out soft and moist. And was sweet enough without using any white sugar making it complete healthy yummy cake full of healthy ingredient. Oats and whole wheat flour is a great to go with combination give perfect texture and crumb to cake. Watermelon seeds on top gives just needed crunch with every bite, wish I had added little more of them.
This is a quick one bowl recipe if you have dates Puree made ahead of time. Just dump all ingredients in bowl stir and its ready for bake. Try this cake and I m sure you will bake it again and again. I packed them today for kids snack box you too try this and your kids will love it too.

Ingredients

  1. 3/4 cupwhole wheat flour
  2. 3/4 cupoats quick
  3. 1/2 cupoil
  4. 1/4 cupcane sugar
  5. 1/2 cupdates pure
  6. 1/4 cupmilk hot
  7. 1 tspnbaking soda
  8. 1 tspnbaking powder
  9. 1 tbspwatermelon seeds
  10. 1 tspnvanilla extract ( i used powder)

Cooking Instructions

    For dates puree : wash n boil dates in water till soft,cool n puree in mixi.

    In a bowl take whole wheat flour, oats, baking soda, baking powder give it a nice stir so that everything is mixed properly.

    Add cane sugar and vanilla powder mix again.

    Add oil, dates Puree mix well so that no lumps are formed.

    At this stage better should be too tight so add 1/4 cup or less hot milk to adjust the batter consistency. Mix nicely but don't over beat. Batter should be thick type.

    Transfer batter to a greased baking tin, top with some watermelon seeds and bake in a preheated oven at 160 degree for 25- 30 minute Or tooth pick comes out clean.

    Let it cool on counter for 10 min then invert it on wire rack for complete cooling.
