Ingredients

  1. 1 Cupwheat bulgar
  2. 2 cupswater
  3. 4 cupsspinach roughly chopped
  4. 1/4 cuptomatoes sundried
  5. 1/4 cupalmonds sliced
  6. 3goat cheese tbl crumbled
  7. 4olive oil tbl
  8. 4vinegar tbl balsalmic
  9. to tastesalt pepper and

Cooking Instructions

  1. 1

    Bring the 2 cups of water to boil in a medium sized pot. Add the bulgar wheat to the pot and lower the heat to simmer. The bulgar wheat should absorb all the water within 10-12 minutes. Fluff with a fork.

    In a large bowl add the spinach and hot bulgar wheat and combine until the spinach wilts slightly. Add the rest of the ingredients except for the goat cheese and mix together.

    Separate into bowls and crumble the goat cheese on top.

    Grab a fork and enjoy!
