These Spiced Banana Muffins are super easy to make and have a strong flavor of bananas instead of sugars and oils. The combination of brown sugar and spices give a surprising twist to these hearty Muffins. You can bake these Muffins everytime you have leftover mushy bananas.
The delicious Banana Muffins are easy for kids to make and are absolutely scrumptious! The kids will gobble them up, guaranteed!! I made these last weekend for friends and they absolutely adored them! They are your perfect companions for any tea party or get together with families. My husband could not stop eating them!

Ingredients

  1. 200 gflour
  2. 2eggs
  3. 200 gbrown sugar
  4. 1/2 tbspbaking soda
  5. 1 tbspbaking powder
  6. 1/2 tspsalt
  7. 1/2 tspnutmeg ground
  8. 1/2 tspcinamon ground
  9. 1 tspvanilla extract
  10. 100 mlcooking oil good
  11. 30 gbutter margarine low fat /
  12. 2bananas overripe
  13. VANILLA BUTTER FOR FROSTING
  14. 150 gmargarine softened
  15. 1 teaspoonvanilla essence
  16. 1 - 2 teaspoonsmilk
  17. 1 cupsugar powdered

Cooking Instructions

    Heat oven to 350/180C. In a large bowl beat eggs, mashed bananas, brown sugar, oil, butter and vanilla essence with a handheld electric mixer until smooth.

    Add rest of dry ingredients and beat another minute with mixer for around a minute. Whisk until you have a smooth batter.

    Line muffin tray with paper muffin cases. Spoon batter in to to muffin cases and bake about 10-15 minutes until tops are golden brown. Keep aside to cool for about 30 minutes.

    For the vanilla butter frosting combine sugar and butter in a medium sized bowl and mix with electric mixer until smooth. Add vanilla essence and milk and beat further until smooth and spreadable. You can add in a spoon more milk if frosting is too thick.

    Coat muffins with frosting and top with sugar colored balls. The tea party can begin!
