Date Balls

I usually only make these for holidays but I was craving them. Enjoy!
Cooking Instructions
- 1
Take your dates lay them out and squeeze them a little sometimes they miss the pits.
- 2
Cut up your dates into little pieces watching for pits, I used scissors. Usually directly in the pot is easiest. Dates are very sticky.
- 3
Add to the pot of cut up dates, your butter, &sugar. Boil until smooth, &stir frequently. 15mins maybe, on medium high heat.
- 4
Once smooth, cool. Then add your mixture of egg, salt, and vanilla and milk. Then add your rice crispies. Mix together. Let it cool for awhile, dates get very hot.
- 5
Once cooled.. Take some butter and rub it in between your hands. Then take a teaspoon amount of the date mix and make balls. Then roll around in shredded coconut. Let cool on a plate or parchment paper. Enjoy👌

Dates provide a wide range of essential nutrients and it's high content of sugar gives a lot of energy when you are fasting. It contains a lot of protein and fiber and soft dates can be cooked in clarified butter/ghee, pitted with nuts of your choice and be served yummy and healthy sweets. Very good with kids this sweet goes well with the adults too who love sweets but try to avoid store bought ones. Enjoy and happy eating!!! Kamalika Basu De -
