Cooking Instructions

Boil the diced potatoes in salted water until they fall apart when pierced with a fork. 30 minutes or so.

Drain potatoes. Add milk, butter, and spices. Smash by hand or whip with a hand mixer.

Fold in the green chilies & cheese.

Top with a dusting I smoked paprika, if desired.

I served this with my chipotle chicken recipe and spooned the sauce over the potatoes! Yummmm

This is a variation on"Hashed Potatoes With Potatoes Only". It's a spicy version of hashed potatoes that goes well with beer.It's best to shred the potato with a slicer or mandoline, since more starch will come out of it and it will stick together better. Don't remove any moisture that comes out of the potatoes.If you don't like very spicy food, halve the amount of curry powder.You can make this in a frying pan too rather than on a griddle.
