A spicy spin on classic mashed potatoes

Ingredients

8 servings
  1. 3 lbRed skin potatoes, cut up (skin left on)
  2. 4 tbspButter
  3. 1/2 cupMilk, more or less to desired consistency
  4. 1 tspGarlic powder
  5. 1/2 tspSalt & pepper
  6. 4 ozCan of diced green chilies
  7. 6 ozPepper jack cheese, grated
  8. 1 eachSmoked paprika, optional topping

Cooking Instructions

45 mins
  1. 1

    Boil the diced potatoes in salted water until they fall apart when pierced with a fork. 30 minutes or so.

    Drain potatoes. Add milk, butter, and spices. Smash by hand or whip with a hand mixer.

  3. 3

    Fold in the green chilies & cheese.

  4. 4

    Top with a dusting I smoked paprika, if desired.

  5. 5

    I served this with my chipotle chicken recipe and spooned the sauce over the potatoes! Yummmm
