Khandvi is a popular gujrati snack all over india, made of besan. Here I am presenting it in a different way. In my recipe, I have twisted besan khandvi in paneer stuffed ravioli with spinach besan curry.

Khandvi is a popular gujrati snack all over india, made of besan. Here I am presenting it in a different way. In my recipe, I have twisted besan khandvi in paneer stuffed ravioli with spinach besan curry.
Cooking Instructions

For stuffing add all in and mix it well.

To make khandvi ravioli mix besan, buttermilk, and stir well till all the lumps are dissolved. Then add salt, turmeric, green chilli - ginger paste, asafoetida and mix it well.

Pour the better in a sauce pan, switch on the gas and keep the flame lowest, begin to stir. Keep strring continuously so that the lumps don't form, cook it for 15 to 20 minutes in low flame.

Check the correct consistency of better try out small portion first.

Then quickly spread portion of the better over the greased inverted thalis or marble table top as thinly as possible while the better is still hot.

When cool, cut in to circle shape with the help of circle cutter. Put 1 tbsp stuffing on center of khandvi circle, cover it with other khandvi circle and make shape of ravioli with the help of fork.

Tempering it with mustard seeds, sesame seeds, curry leaves

To make curry mix besan, buttermilk. Heat the mixture in a pan, add chill - ginger paste, spinich paste, curry leaves, salt and sugar, cook it 15 to 20 min in low flame, stir continuously.

Temper it with cumin seeds, asafoetida, bay leaf, clove and cinnamon stick.

In a seving bowl put curry then put khandvi ravioli and garnish with coriander /grated coconut /cherry /grated paneer.
