Cucumber rolls

Cucumber rolls are great and can be easily customized to your liking. My favorite way though is with crab and salmon

The only thing i do differently on the recipe is i use one large seedless cucumber, around 12" and omit the tomatoes. Very tasty side dish, enjoy!

I was looking for something different than the usual egg and potato salad. I found this recipe 15 years ago in Taste of Home magazine.

My mother used to make a similar recipe when I was younger. I was never able to get the recipe from her so this is the best recreation of it.

I've yet to find anyone that would turn down these rolls after their first taste. These also freeze well and make good quick meals out of the freezer.

Just something I threw together as a snack idea with stuff I had on hand. I foolishly thought I'd put my halves together to eat like a sandwich. Yeah, all my filling wanted to squish out, so not a good idea. I took it back apart. Definitely eat boat style or portioned out onto slices. Lol.One cucumber can serve 2 people. Also, depending on how much filling you put in your cucumber you could potentially fill a second cuke. Hope you enjoy this tasty low carb treat!
