Now when the winters are at peak my heart hankers for a bowl of warm and comforting soup, that is quick and easy to make and provide that much needed warmth to the body and soul. It's really so rich and creamy without any dairy products and It doesn't weighs you down. It is a perfect accompaniment to any salad, pasta or bread.This low-carb, healthy and hearty soup can be thrown together under 30 minutes...all you need is a few ingredients.

Ingredients

20-25 minutes
2-3 servings
  1. 1medium size cauliflower head washed and cut into florets
  2. 1 tbspolive oil
  3. 1 tbspchopped garlic
  4. 1-2bay leaves
  5. 1onion chopped
  6. 1/2 cupCashew milk or 2 tbsp cashew paste
  7. to tasteSalt and pepper
  8. 1 tbspnutritional yeast (optional)
  9. 4 cupswater
  10. as neededFresh coriander leaves to garnish
  11. As neededFew cauliflower florets roasted in a little oil to garnish

Cooking Instructions

20-25 minutes

    Heat oil in a deep dish, add garlic and saute for a few seconds then add onions and bay leaves, cook till onions become translucent.

    Add salt and pepper to taste.
    Now add cauliflower florets, mix well and add water to it, let it boil and cook covered on a medium flame for 15-20 minutes.

    Open the lid, and check the cauliflower, it would have become become soft.
    Then using a hand blender process it into a soup.

    Add cashew paste/ milk to the soup.
    Then put it back on gas and add nutritional yeast(you can skip this,). Serve hot with some roasted cauliflower and garlic and some extra virgin olive oil.
