Rajma or red kidney beans mostly have a space in north Indian thali. Rajma Pulao is made with some whole Indian spices, succulent tomatoes, aromat basmati rice and red kidney beans. Rajma is rich in iron and protein when it's combined with rice it is a great sauce of carbohydrates.

Ingredients

  1. 1 cup Basmati rice
  2. 1 cupRed kidney beans (soaked for 6 hours)
  3. 4 tbspGhee
  4. 1bay leaf
  5. 1cinnamon stick
  6. 2cardamom pods
  7. 1star anise
  8. 3cloves
  9. 1/2 tbspCumin seeds
  10. 1 onion (medium size - thinly sliced)
  11. 1 tomato (medium size - diced)
  12. 5green chillies
  13. 2 tbspchopped coriander leaves
  14. 1/2 tbspginger garlic paste
  15. 1.5 tbspRed chilli powder
  16. 1 tbspcoriander powder
  17. 1/2 tbspturmeric powder
  18. 1 tbspbiryani masala
  19. 2 cupswater (for cooking rice)
  20. 3 cupswater (for cooking rajma)
  21. To tasteSalt

Cooking Instructions

    Soak the rajma or red kidney beans in water for 8 hours. After 8 hours transfer it to a pressure cooker and cook for 8 whistles. Save the rajma cooked water.

    Take a vessel and add melted ghee. Add bay leaf, cinnamon stick,cumin seeds, cardamom pods, cloves and star anise. Saute until aromatic.

    Add onion and saute until golden brown.

  4. 4

    Add ginger garlic paste and saute until the raw smell goes.

  5. 5

    Add tomatoes and green chilies. Saute until the tomato and onion are mushy.

  6. 6

    Add Chilli powder, briyani masala, turmeric powder, coriander powder and salt. Saute until the oil is released.

    Add cooked rajma, water (2 cups including rajma cooked water) and basmati rice.

  8. 8

    Cover and cook in high flame for 8 mins. After 8 mins use a spoon to flip the rice from bottom to top (this procedure is done to cook the rice evenly)

    Again cover and cook in low flame for 7 mins. Garnish with coriander leaves. Serve hot.
