wipe the kombu with a clean tea towel or paper.

make 2 to 3 breaks into the kombu in a vertical line.

add water in a pan and put kombu. turn a gas on medium-low.

do not put a lid on the pan.

do not boil the water. when the small bubbles came out from

kombu, take kombu away from the pan.

then add katsuobushi, turn the gas very low and simmer 1min.

then turn the gas off and wait for 2mins.

prepare big bowl and colander. put paper on the colander

and strain off the broth from the katsuobushi.

do not squeeze the katsuobushi.

now, it's ready to use!
コツ・ポイント
it can be kept frozen if you can't use them all.
if you are a vegan, you can make dashi without katsuobushi.
