Before blanching, rinse the komatsuna well.

In a large pot, bring water to a boil, then add salt.

Add one bunch of komatsuna and blanch for 30-45 seconds.

Transfer cooked komatsuna to a colander. Repeat once more.

Run cool water over the komatsuna until cool to the touch.

Use your hands to squeeze out extra moisture from komatsuna

In a large bowl, whisk in all dressing ingredients.

Stir shallots/tuna/ 2 inches long piece of chopped komatsuna

Toss well. Chill for at least 1 hour before serving!

To blanch the komatsuna, first dip the stems into water for 30 seconds, then submerge the entire thing for 15 seconds.
