材料

4 servings
  1. green bell pepper (julienne) 1/2 medium
  2. red bell pepper (julienne) 1/2 medium
  3. yellow bell pepper (julienne) 1/2 medium
  4. french beans 100 g
  5. okra 6-8
  6. bamboo shoots 1 cup
  7. fresh ginger (minced) 1 tablespoon
  8. garlic (minced) 3 cloves
  9. fresh basil 1 cup
  10. avocado oil 2 tablespoons
  11. red curry paste 3 tablespoons
  12. light or regular coconut milk 1 can (13.5 oz)
  13. fish sauce 2 tablespoons
  14. coconut palm sugar 2 teaspoons
  15. better than bouillon vegetable base 1 teaspoon
  16. dried kaffir lime leaves (removed from the stem) 5
  17. kosher salt to taste

作り方

    Gather all the ingredients.

    Oil in a medium Dutch oven over medium heat.

  3. 3

    Add ginger, garlic, and curry paste. Cook until fragrant.

  4. 4

    Slowly add coconut milk into the pot to dissolve the paste.

  5. 5

    Add fish sauce, sugar, bouillon and lime leaves.

  6. 6

    Bring it to a simmer, add all vegetables.

  7. 7

    Cover and cook until all the veggies are heated through.

    Taste, add salt as needed.

  9. 9

    Remove from heat, stir in basil.

  10. 10

    Serve with jasmine rice! Don't forget to remove lime leaves!

No water is added to this recipe to concentrate the flavor from all the vegetables.
