Gather all the ingredients.

Oil in a Dutch oven (2 US qt) over medium low heat.

Add veggies, stir in salt and cook 15 mins or until soft.

Place the meat in a small bowl. Season with salt and pepper.

Oil in a small skillet over medium high heat.

Add the beef and sear all sides util browned.

Transfer the meat to the Dutch oven, and deglaze with wine.

Transfer the liquid into the Dutch oven.

Bring it to a simmer and cook for 5 minutes.

Add chopped tomato/bay leaf/marjoram/salt/pepper/sugar.

Bring to a simmer, then cover and cook. Stir occasionally.

Cook for 2hrs or until tender enough to shred the beef.

Use a spatula or spoon to shred the beef.

Taste, adjust with salt and pepper.

Serve with your choice of pasta!
