Gather all the ingredients.

Bring water to a boil in a large pot. Add pasta and cook.

For the cold pasta, you should add extra salt when cooking.

Make sure it's saltier than regular pasta water (2%).

Cook 1 min longer than package directions.

Transfer cooked pasta to a colander.

Run cool water over the pasta until it's cool to the touch.

Spread the pasta over a paper towel. Apply one more →

paper towel over it. Tap gently to remove excess moisture.

In a large mixing bowl, combine all the sauce ingredients.

Whisk well until well mixed.

Combine pasta and all the ingredients. Toss well.

Taste. Add salt as needed. Put in a serving bowl, and serve
コツ・ポイント
Use fresh lemon zest for a bright aftertaste and a Mediterranean vibe. Sprinkle the pasta with ikura as a seasoning.
