作り方

Combine all the dressing ingredients in a small sauce pan.

Heat to medium and whisk until sugar is totally dissolved.

NOTE: Do not bring it to a boil.

Prepare a bowl of iced water.

Dip the bottom of the sauce pan into it to cool it off.

Stir in lemon juice and mix well.

Store in an airtight container in a fridge until its served

Prepare your choice of toppings.

NOTE: toppings should be bite sized or thin strips so →

all the toppings are enjoyed evenly!

Cook your soba noodles according to the package instructions

Transfer cooked soba noodles to a colander.

Run cool water over the soba until it's cool to the touch.

Divide the soba into separate bowls or plates.

Place your choice of toppings over the soba noodles.

Pour the dressing over the noodles right before serving.

Quickly cool the dressing off to prevent the aroma from evaporating!
