材料

  1. cooked shrimp (thawed) or raw shrimp (peeled and deveined, then poached) 1 lb
  2. ripe avocados (peeled, pitted and diced) 2 large
  3. shallot (finely minced) 1 medium
  4. red bell pepper (finely minced) 1/4 cup
  5. fresh Italian parsley (minced) 2 tablespoons
  6. feta cheese 1/3 cup
  7. for the dressing:
  8. extra virgin olive oil 3 tablespoons
  9. lime juice 2 tablespoons
  10. galic (finely minced) 1 clove
  11. ground cumin 1/2 teaspoon
  12. cane sugar 1/2 tablespoon
  13. fine sea salt 1/2 teaspoon
  14. freshly ground black pepper 1/8 teaspoon
  15. baby arugula/baby spinach/spring mix

作り方

    Gather the ingredients.

    NOTE: Depending on the size of the shrimp, chop if needed.

    Combine all the dressing ingredients in a large mixing bowl.

    Add shrimp/avocado/shallots/bell pepper/parsley/feta cheese.

  5. 5

    Stir gently to combine. Taste, and add salt as needed.

  6. 6

    Chill for at least 30 mins before serving.

    Serving w/ your favorite greens is good for the party table

コツ・ポイント

Get a green avocado and aim for your favorite ripeness when cooking. Once it reaches that point, throw it in the fridge!
