The creamy texture and hints of lime juice give you a refreshing after taste. Not only is it my go-to salad, it's good for any occasion and you'll LOVE it :-)

Gather all the ingredients.

Put potatoes in a medium pot. Submerge potatoes in water.

Add 1 tsp salt, bring to a boil then simmer until tender.

NOTE: Make sure not to over cook.

Drain the water well and transfer to a mixing bowl.

Add frozen vegetables and let the potatoes cool.

Whisk together all the dressing ingredients in a large bowl.

Add ham, potatoes, mixed vegetables and parsley.

Mix gently to combine. Taste, season with salt as needed.

Cover and refrigerate for an hour to allow flavor to blend.

While cooking the potatoes, make sure to not over cook them to keep a nice texture.
