Make a square with newspaper and fold the box. Make another box with another newspaper but with baking paper for this one. Put the second box in the first box to make the box strong.

Put Indian sugar in the bottom of mold.

Shift maida and gluten powder

Put eggs in a bowl and mix well to whip. Then add sugar and whip more. Start from low speed and then faster.

Slow down the whipper when the egg is well whipped and no longer looks like liquid to make the surface silky and smooth. (This is the most important part!!)

Put honey and mirin in a small bowl and microwave for 30 sec with 600W to soften. Then add to the egg and mix well.

Add maida and gluten powder and mix again. Do not mix too much.

Put the dough into the mold, drop the mold twice to remove the air from the dough. Cut the dough with a knife to remove the air.

Start pre heating oven for 170 degrees.

Bake for 20 min with 170 degrees, and then for 22-25min with 140 degrees.

Cool down and take off the paper. Cover with plastic film and leave for 3 days in a cool place with upside down. (Plastic film will stick to the surface if keeping in the fridge.)
