Sukiyaki is a popular Japanese festive hot pot (nabemono) dish served with sliced beef, fresh vegetables and tofu which are simmered in a sweet/savory sauce (warishita). Most sukiyaki recipes add udon/cooked rice to let it absorb the tasty broth to enjoy the last bit of it. This recipe is for the best part of sukiyaki!

Gather all the ingredients.

NOTE: Separate the green part of the scallions for last step

Cook udon according to the package directions. Set aside.

Oil in a large skillet over medium heat.

Add the meat and cook until almost heated through.

Remove from the skillet, and set aside.

NOTE: The wagyu beef is fatty meat, so leave 1 tbs oil →

and use a paper towel to remove excess fat from the skillet.

Heat to medium, and add scallion/shimeji and cook for 3 mins

Add udon/beef/all the sauce ingredients and toss to combine.

NOTE: Let the udon absorb the sauce while tossing.

Add green parts of the scallions and toss until they wilt.

Serve.
