In a skillet heat oil and saute the garlic, italian seasoning and onion until fragant.

Add rice, turmeric and rosemary. Toast rice making sure not to let it burn or brown too much. Stir rice until it is evenly yellow colored.

Once rice is toasted add in chicken stock and salt. Taste the cooking liquid before covering, adjust salt if needed. Cover and cook on medium low for approximately 10 minutes. Covering is very important. make sure you have a lid.

After 10 minutes stir your rice ONCE. Check for doneness, if it seems too chewy still add the rest of the water. Add in frozen vegetables to top of rice and cover. cook for another 5-7 minutes.

Make sure your rice doesnt dry up before its done ,usually your skillet will crackle when the rice has absorbed all the water. Always check to for doneness before adding more water because it could result in mushy rice.

Once rice is done stir in vegetables and enjoy!! I usually serve with roasted chicken, a fried egg on top, or seared skirt steak cut into strips on top.

To make the rice into a one skillet meal you can saute sausage or chorizo in it before cooking rice and put to the side. Use rendered fat to saute Onion and garlic instead of olive oil. once rice is done just stir in the yummys! (: Yummy!
