Mujaddara with caramelized onions & unsweetened yorghut

Mujaddara is a classic Arabic recipe that consists of cooked brown lentils together with rice (white or brown), and garnished with caramelized or sautéed onions. In Kenya we call it 'Mchele Kamande' and most households have prepared it. I just added some garnish and onions to make it more flavourful. Cooking Instructions

Wash and rinse the rice with water before pouring in 3 cups of water with oil, a pinch of salt and 2 table spoons of coconut powder.

Wash, rinse the brown lentils before boiling then for 25 minutes.

Once the rice is ready, give it 5 minutes for it to airate then serve in a large ball. Dice the carrots, spring onions and coriander into small pieces.

Mix the brown lentils, carrots, spring onions and coriander into the rice and stir carefully. Add salt to taste.

Cut the red onions and add to a frying pan with little oil. Let it fry until it browns. You can also use white onions.

Garnish with onions and coriander and thin slices of avocado.

You can try it out with yorghut. Serve some on the side. Enjoy!
