Super Lazy Chicken and Potato Roast

Lock down, work work work and cook cook cook with a super active toddler and "don't disturb" hubby...all ideas one can get are lazy one pot meals. Here is my one such dish...which favorably has become my husband's favorite..so no argument there ;)
Cooking Instructions

Score the legs, add butter, salt, black pepper, paprika or kashmiri red chilli powder, garlic, lemon juice, thyme, rosemary. rub it all on legs, let it marinate for 4 hours

Preheat oven at 220 c, in baking dish add olive oil, add legs, tomatoes cut in half, potatoes peeled and halved, onion cut in half. put in oven, occasionally turn the legs so as to roast evenly…1 hr…check..if done…switch off the oven…let it sit in oven for 5 min…serve hot.

Lots of people go to great lengths and expense to learn how to make a perfect whole roast bird. But unless I want to make a presentation of carving, I prefer the result of roasting individual drums, thighs, whole wings and half breast pieces (breast meat cooks much more quickly than dark) - lots of crispy chicken skin, great flavor, uniform cooking, and I get all the carving mess out of the way on the front end.If you're tempted to ask how to make a boneless, skinless version of this dish, don't.
