Cooking Instructions

Prepare all your ingredients and preheat the oven to 180 degrees Celsius. Prepare your baking tray by greasing with some butter and dusting it with flour. Tap your baking tray to get rid of excess flour.

Mix your flour, salt, baking soda and cinnamon well in a bowl and set aside. Cream together your butter and sugar in a separate bowl using a whisk or a hand mixer. Add your egg and essence and mix well. Add bananas and mix well. Add in the flour slowly and using a spatula or cooking spoon, fold it in.

When it is all incorporated, add your oats and fold it in slowly until the mixture comes together. Do not over-mix.

Spoon out the mixture onto the ready baking tray. You can choose to make either large cookies (scoop out one heaped tablespoon) or small cookies (scoop out 1/2 of a tablespoon). Place them at least 2-3 cm apart as they really spread out. Bake for 20-22 minutes for the large cookies and 13 minutes for the small cookies.

Remove from oven and let them cool on the baking tray for 3 minutes then transfer to a cooling rack to cool completely. This takes 10-15 minutes.

Store in an airtight container or you can devour them with your family immediately!

This is a very forgiving recipe and do feel free to adjust it to your liking. It is important for you to taste your bananas before using them as different bananas have different levels of sweetness. If they are very sweet, reduce the amount of sugar to 1/4 of a cup or 3-4 tablespoons.
