Cooking Instructions

In a sufuria, add the dried fruits,spices, sugar,water and margarine. In medium heat bring to a boil and let it boil for 5 mins

After it has boiled let it cool completely before proceeding

Pre heat your oven at 180°c for 10 mins and grease and dust the baking pan.

Transfer the cooled mixture into a mixing bowl and add vanilla essence and mix

Add the beaten eggs and mix as well
- 6
In a separate bowl and the dried ingredients and mix. Finally add the wet ingredients into the dry ingredients and mix. Csreful not to over mix

Pour the mixture in a greased pan and bake for 60 mins at 180°c or till the cake bakes.

Let the cake cool once its fully baked. Transfer it into a cooling rack. You can drizzle a tot of aged whiskey on top of the cake and let it stay over night before serving. The fruit cake is yummiest after 24 hrs. Enjoy with a warm cup of tea.

I actually made this cake for Valentine's day. I mean Valentine's day is too overfilled with chocolate and heart shapes. Sometimes we just need a simple cake like this. Unlike all the carrot cakes which I'd tasted, there're actually carrots in this cake. Those commercial cakes are usually filled with food coloring and artificial flavorings. To make the cake worse, they used over-sugary cream cheese fillings which kinda make the cakes unbearable to eat, IMHO.As you should have known, I am not a fan of cakes. I also decided to keep my cake 100% vegan, cos it is one of my goals for 2019; to push out at least 1 vegan recipe a week. In closing, I really hope you will give this recipe a try.
