I'm still trying to perfect this recipe but long story short: I wanna go over and above simple commercial tomato, barbecue, and chilli sauce for my fries and other snacks like hotdogs, burgers etc so I can have amazing and complex flavours while also providing healthier snacks.

Ingredients

  1. 1/2 cuptomato concasse (tomatoes cooked with herbs and spices)
  2. 1 tablespoonapple cider vinegar or other vinegar
  3. 2 tablespoonschoma sauce
  4. 2 tablespoonsgarlic tomato sauce or ketchup
  5. 1 tablespoonmayonnaise
  6. Kachumbari veges eg hoho onion dhania cucumber chili (no tomato)
  7. Deep fried chips
  8. (Optional) pickles eg gherkins, capers (love these)

Cooking Instructions

    Chop the kachumbari veges and pickles very finely, mix with cold concasse and season with herbal salt. Preferably any additional spices to salt be cooked with the concasse. Let kachumbari be 1 cup.

    Add the other sauces and keep adjusting vinegar to desired acidity.

    Toss in the fries or you can serve on the side. Perfect as a topping for hotdogs and you can also try on many other foods. Healthy and delicious!
