  1. Spaghetti (1 pound)
  2. Salted water for boiling
  3. Spinach Sauce Ingredients:
  4. 3 cupsfrozen or fresh spinach
  5. 2tomatoes
  6. 1small onion
  7. 5 clovesgarlic
  8. 2 tablespoonsvegetable oil
  9. 1/4 teaspoonground cumin
  10. 1/4 teaspoonground cinnamon
  11. 1/4 teaspoonblack pepper
  12. 1 tablespoontomato paste
  13. 1vegetable bouillon cube
  14. 2basil leaves
  15. 3 cupswater

    Boil the spaghetti, drain, rinse, and set aside.

    To prepare the sauce: In a deep pot, heat the oil and add finely chopped onion. Sauté, then add garlic until softened, followed by spices and the bouillon cube. Mix well. Add peeled and medium-diced tomatoes and stir until the tomatoes slightly soften.

    Add the spinach and stir well until the spinach releases its water.

    Add the water and a little dried or fresh basil (I used purple basil) and let the sauce boil well to thicken.

    Either mix the spaghetti with the sauce and serve, or place the spaghetti on a serving dish and pour the sauce over it before serving.
