I referenced the cookbooks "The Power of Rice, The Power of Grains" and "Root Miso" written by Hisao Nagayama.
This dish will whet your appetite.
If you prefer some sweetness, add sugar. Recipe by Yunpi-
Cooking Instructions
- 1
Shave the burdock root and carrots (as if sharpening a pencil with a knife), then set aside. Combine the miso, mirin, and sake, and mix well.
- 2
Place the red chili peppers into a sauce pan, heat sesame oil, then sauté the burdock root. When it starts to produce a nice aroma, add the carrots, and sauté until tender. Add the cooked soy beans, coat with oil, add the miso, mirin, and sake, then simmer until the sauce thickens. Sprinkle with sesame seeds to taste.

Burdock Root, Konnyaku and Beef Simmered with Miso Burdock Root, Konnyaku and Beef Simmered with Miso
My beloved daughter loves this dish!Since the sauce has miso, keep simmering over low heat only. Otherwise it will burn. If you want to cut down on the cooking time, use a pressure cooker. For 2 servings. Recipe by Ha-tannookkasan cookpad.japan -
Salmon and Burdock Root Stewed in Sesame Seed and Miso sauce Salmon and Burdock Root Stewed in Sesame Seed and Miso sauce
I want to serve well-seasoned stewed dishes to my family that'll go well with a bowl of white rice. But I also want to cut down on the amount of salt used. So the sesame oil and ground sesame seeds adds flavor even with a light seasoning. The burdock should be slightly firm after cooking. If you prefer the burdock to be softened more, cook for a little longer at Step 4. To avoid the salmon from flaking while cooking, shake the pan at Step 6 or use a spatula to mix briefly to blend with the seasoning ingredients. Recipe by caramel-cookie cookpad.japan -
Simmered Burdock Root with Sesame Seeds Simmered Burdock Root with Sesame Seeds
The burdock root pickles I bought were delicious, so I made my own. After experimenting a lot, I settled on this recipe.Only cut as many of the burdock roots as you are going to eat, and leave the rest to marinate. They will continue to absorb the seasonings (if they get to the stage where you feel you don't want the flavor to get any stronger, pour off the liquid and return to the fridge).Step 3 might be a bit of a pain, but pounding the roots one by one means that they crack evenly and thus absorb the same amount of flavor when soaked. Tasty Burdock Root and Carrot Kinpira Tasty Burdock Root and Carrot Kinpira
I normally make a quick kimpira burdock dish but one day I received high-quality burdock roots. I didn't want to waste by making my standard dish, so I took the time to make this delicious kimpira. Since then this recipe has been our regular in my family. This is a very good recipe so please have a try!!*At Step 2, you can boil water on the stove and make dashi stock in a saucepan. Taste the dashi first and if you think it might be too strong, the taste in the resultant dish will be perfect. *Adjust the amount the chili pepper to your liking. For 2-3 servings. Burdock Root and Carrot Pork Rolls Burdock Root and Carrot Pork Rolls
I wanted to use the leftover burdock root and carrot sitting in the fridge. The sweet and salty sauce will really wake up your appetite! The crunchy texture of the burdock root is also great!! In Step 4, grease will come out from the pork, so wipe off any excess fat with a paper towel. It will also be delicious if you use enoki mushrooms, potato, nagaimo, or shiso leaves as the filling. Chunky Taro Root, Burdock Root, and Pork Japanese-Style Curry Chunky Taro Root, Burdock Root, and Pork Japanese-Style Curry
I figured I would make a curry flavored niku jaga with pork, taro potatoes, and shimeji mushrooms etc., but I changed my mind, and made Japanese-style curry . This is superb if you eat it while breaking apart large taro potatoes. I am really happy with how thus turned out.Using konbu seaweed broth works really well for the soup stock. The burdock root also produced a nice aroma for the broth . Burdock root+taro potatoes+shimeji mushrooms+pork etc. is a good combination, and are indispensable ingredients. For 9 servings.
