Fried Udon Noodles

In a certain famous Okonomiyaki restaurant, they add dried bonito flakes to their griddle-fried udon noodles and I copied that idea for this.
Just adding dried bonito flakes enriches the flavor!
Use leftover vegetables in the fridge such as cabbage and carrots.
Some vegetables give out water, so adjust the amount of seasoning if the taste is still thin and light after adding the Japanese worcestershire sauce and soy sauce. Recipe by classy
Cooking Instructions
- 1
Cut the vegetables. Heat a frying pan over medium heat and stir fry the pork.
- 2
When the pork has cooked, take out to a tray, but keep the oil in the pan. Cook the vegetables with the pork oil.
- 3
Once the vegetables have cooked, add the udon noodles, season with umami seasoning (optional), dashi stock powder and sake.
- 4
Sprinkle bonito flakes on the noodles. Fry the noodles well until browned.
- 5
After the noodles have cooked well, season with Japanese-style Worcestershire sauce and soy sauce and mix. It's done.
- 6
It's delicious!

Pork Udon Noodles Pork Udon Noodles
The udon I ate at a restaurant was so delicious that I wanted to try recreating it.For the dashi, you can use iriko dashi or iriko and konbu. Thai-Style Stir-Fried Udon Noodles Thai-Style Stir-Fried Udon Noodles
I made some stir fried udon when I was visiting friends in Bangkok. They were out of soy sauce so I tried using Thai fish sauce instead. Although people in Bangkok use limes, lemon is a fine substitute. Now I'm very fond of stir fried udon with nam pla.Microwave the udon noodles briefly to warm them up, and untangle them in advance. If you are using frozen noodles, rinse them in water to get rid of any surface stickiness. If you add some fresh coriander, it will taste more like Thai cooking!I recommend adding cherry tomatoes. I was going to make yuzu pepper pasta when the hubby said "I want udon!" This was the recipe I came up with then. After you add the noodles to the pan you need to work quickly, so have all the seasoning ingredients pre-measured and ready to go. If you don't like spicy food, adjust the amount of yuzu pepper to your taste. Stir fry the meat until it's crispy for the best flavor. Use whatever vegetables you have. Even tomatoes and eggplants are surprisingly good in this. For 2 servings. Recipe by Harunbouya cookpad.japan -
