Cooking Instructions
- 1
Pound the meat all over with a meat mallet. (You can find meat mallets at dollar stores)
- 2
Once it looks like this, sprinkle with salt and pepper.
- 3
Lightly dust the meat with flour.
- 4
Crack the egg, beat it, and mix with flour and water to make the batter.
- 5
The batter's consistency will vary depending on the egg size. It should be slightly thinner than pancake batter. Adjust with water as needed.
- 6
Place fresh breadcrumbs in a tray and lightly break them up.
- 7
I didn't have a tray, so I used the lid of a quick-pickling container.
- 8
Dip the meat in the batter and place it on the breadcrumbs. Sprinkle breadcrumbs on top as well. (Using tongs will keep your hands from getting sticky)
- 9
Lay plastic wrap on the counter, place the meat from step 8 on it, and press down firmly three times with your palm.
- 10
Shape it into a whale shape. Keep your left hand straight and your right hand in a curved shape like this: )
- 11
Fry at 340°F (170°C) for about 1.5 minutes on each side, about 3 minutes total.
- 12
It turned out like this.
- 13
Let it cool slightly before cutting.
- 14
Here's a cross-section view. It's thick, right? And the coating isn't too thick, is it?
- 15
Serve with vegetables, and it's done.
- 16
Note: You can also show the cut side when serving♪
- 17
It's perfectly fine to use regular breadcrumbs instead of fresh ones. In that case, just press them lightly onto the meat.
- 18
A 120-gram bag of fresh breadcrumbs had about 1/4 left over. There was also enough batter left to make another cutlet.

The pork tenderloin is too lean. I wanted to make a lighter dish than usual cutlets, using pork tenderloin.Pounding the meat breaks down the fibre. Ground Meat Cutlets Juicy with Cabbage and Pork Ground Meat Cutlets Juicy with Cabbage and Pork
I enhanced the heartiness of the meat by putting lots of cabbage inside I discovered it to be more juicy and delicious this way. This is made with affordable ingredients that's very satisfying taste and heartiness. It's my family's favorite dish. When I reheated this and served it to my husband who came home late, he was amazed at how juicy and delicious they still were. The little bit of onion mixed in is the source of the slight sweetness and the juicy tastiness! Since the batter is liquid, the key is to coat the meat after shaping it into a ball instead of flattening it.Don't rub in the cabbage and onion too much, but just roughly toss with salt. Following the described steps, the key is to mix with the meat immediately. Recipe by cocorarara cookpad.japan -

Tender and Crispy Pan Fried Chicken Breast With Herbed Breadcrumbs Tender and Crispy Pan Fried Chicken Breast With Herbed Breadcrumbs
I always think that prepping food right after bringing the ingredients home is a bother. So in order to test how well sake works in such situations, I tried marinating whole chicken breasts in sake and cooking it the next day. The results were great - the sake really made the chicken delicious.Since this is home cooking, I think it's important to keep things simple.Chicken breast meat tends to get dry and stringy, but the sake keeps it moist even when cooked. You just need to put the chicken and the flavoring ingredients in a bag, so it's easy.Chicken coated with bread crumbs is usually baked in the oven, but I prefer the easiness of cooking things quickly in a frying pan.
