Minji githeri with cabbage

A few days ago when I went upcountry I found myself cooking and eating a lot of githeri. Maybe because its my hometown main recipe or maybe because it was available in plenty. Whichever the reason, I really enjoyed it because I don't get to eat a lot of it in the city. Here's another special way to make githeri. Enjoy!

Ingredients

  1. 4 cupsmaize
  2. 6 cupsgreen peas
  3. 1 bunchpotatoes (15piece)
  4. 1/2cut cabbage (medium)
  5. 1large onion
  6. 3large tomatoes

Cooking Instructions

    First boil the maize and green peas until soft.

    Wash all your vegetables then Chop your onions and tomatoes.

    In a generous amount of cooking oil, First stir fry your onions then add tomatoes.

    Next add your potatoes and cook until the potatoes are cooked. They are ready when a fork goes through the potatoes.

    Lastly add your maize and peas mixture and stir. Add salt to taste then stir. Its ready.

    For the cabbage, use a table spoon of cooking oil then steam/stir fry until cooked.

    Serve the githeri with cabbage to complete a balanced diet. Enjoy.
