Minji githeri with cabbage

A few days ago when I went upcountry I found myself cooking and eating a lot of githeri. Maybe because its my hometown main recipe or maybe because it was available in plenty. Whichever the reason, I really enjoyed it because I don't get to eat a lot of it in the city. Here's another special way to make githeri. Enjoy!
Cooking Instructions
- 1
First boil the maize and green peas until soft.
- 2
Wash all your vegetables then Chop your onions and tomatoes.
- 3
In a generous amount of cooking oil, First stir fry your onions then add tomatoes.
- 4
Next add your potatoes and cook until the potatoes are cooked. They are ready when a fork goes through the potatoes.
- 5
Lastly add your maize and peas mixture and stir. Add salt to taste then stir. Its ready.
- 6
For the cabbage, use a table spoon of cooking oil then steam/stir fry until cooked.
- 7
Serve the githeri with cabbage to complete a balanced diet. Enjoy.

I like cabbage. And hamburger meat. In the method of cooking I add the cabbage in near the end. This is because I like the cabbage to still have crunch to it. The less crunch you like the earlier you should add it. Justin Butler -

Giambotta Giambotta
This was my pops favorite dish to make. But because it was so labor intensive, he only made it about once a year.He would let it heat over a low flame for so long after adding the tomatoes, that it would be piping hot. I still have the burns on the top of my mouth from the first time that I tried it. :-)All of the vegetables in this stew combine together to make a delicious dish. This goes great with Italian Bread to dip into it. I have heard that some people add sausage to their Giambotta. To me, it does not need it, but if you want to add then feel free.I have added a picture of the recipe as my dad gave it to me back in 96. It was one of the many last times that he was supposed to cook it, but he never stuck to that goal.I hope you like this as much as my family and close friends love it. #mycookbookEnjoy! J.A.B. -
