Salted Caramel Chocolate Chunk Cookies

I have made salted caramel cookies with the caramel filled in the center of the cookie and was looking for a similar flavored cookie but with the caramel throughout the entire cookie. Chopping soft chewy caramel worked great. This cookie is chewy with caramel and also has Creamy Milk chocolate chunks, a great combination.

Ingredients

  1. 21 /2 cups all-purpose flour
  2. 1/4 teaspoonsalt
  3. 1 teaspoonbaking soda
  4. 1 teaspoonbaking powder
  5. 8 ounces (2 sticks)unsalted butter, at room temperature
  6. 3/4 cuppacked light brown sugar
  7. 3/4 cupgranulated sugar
  8. 1 1/2 teaspoonsvanilla extract
  9. 1large egg and 2 large egg yolks
  10. 7 ouncesLindor Extra Creamy Milk Chocolate, broken into chunks
  11. About 24 SOFT caramel candies, unwrapped, any soft chewy caramel
  12. Coarse sea salt for sprinkling

Cooking Instructions

    Preheat the oven to 350°F. Line baking sheets with parchment paper.

    Prepare Caramels.

  3. 3

    Place caramels in the refrigerator to get cold. Then place in a food processor and pulse until they are cowardly chopped. Put back in the refrigerator while making cookies.

    Make Cookies

    Whisk together flour, baking soda, baking powder and salt in a bowl.

    In a large bowl beat butter and sugars until light and fluffy.

    Add egg, yolks and vanilla and beat in.

  8. 8

    Add flour mixture and beat in just until combined.

  9. 9

    Fold in chocolate chunks and chilled caramel bits.

  10. 10

    Roll onto 1 inch balls and place on prepared pan, flatten tops slightly with your fingers and bake 10 to 15 minutes until just set. Immediatly sprinkle lightly with the sea salt Do not overbake for chewy cookies. Cool on baking sheet 3 minutes then transfer to racks to cool.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US.
