Ingredients

  1. 3 tbspbutter
  2. 1/4 cupfinely chopped white onion
  3. 1/2 cupdry white wine
  4. 1/2 cupplus 1 tablespoon all purpose flour
  5. 5 cupwater
  6. 1 1/2 cupdill pickle juice ( from the pickle jar)
  7. 2 tspdried dill weed, crushed
  8. 1/2 cupheavy cream or whipping cream or milk
  9. 1salt and white pepper to taste
  10. 1 largedill pickle, cut Julienne

Cooking Instructions

    in a large soup or stcl pot, over medium heat melt butter

  2. 2

    add onion and cook until soft.

  3. 3

    add wine and continue to cook until almost all liquid evaporates.

  4. 4

    reduce heat to low and whisk in flour ( do not let it brown) until it os combined.

    add water and pickle juice, whisking or stirrring into the flour mixture.

  6. 6

    bring just to a slow boil, stirring constantly, until soup slightly thickens.

    add dill weed.

  8. 8

    stir in cream, season with salt n white pepper.

  9. 9

    remove from heat.

  10. 10

    serve in bowl and garnish with Julienne dill pickles
