Cucumber - Apple Salad with grapes and Asiago

My mother came home from the market with a whole lot of cucumbers and a whole lot of apples. So they became Super Bowl Salad.

This recipe is quick. Like, stupid quick. The first time I made it, my wife, daughter and I were on our way to a neighbour's house for dinner. Not wanting to arrive empty-handed, I decided to whip up a quick salad. I was able to do so in the time it took for my daughter to find her coat and boots and put them on. She dawdles, so it was about 5 minutes. To help with the mood, I put on Vivaldi's Winter, a.k.a the Chef's Table theme (yes, it's on my playlist). I have an almost Pavlovian response to that piece of music, which basically turns me into the Roadrunner from the old Looney Tunes cartoons. Anyway, despite the rushed prep, the salad was a hit. So here it is. For safety's sake, I padded out the cook time a bit.

use red bell pepper instead of green.and add tomatoes.

A refreshing addition to accompany a heavy meat fest! Made this for a Xmas potluck! Very easy and can be made ahead.I use mirin to balance the flavours, you can also use coconut sugar instead. The chili flakes add a spicy extra kick to this salad.I also use a ziplock bag to reduce washing fi dishes.

The only thing i do differently on the recipe is i use one large seedless cucumber, around 12" and omit the tomatoes. Very tasty side dish, enjoy!

This is a salad I make ALL summer. This is just the basic recipe but you can think outside the box with this and add Parmesan, pepperoni, provolone, salami, additional veggies like roasted peppers or celery etc etc. Its so simple but delicious!

This recipe is great for hot days and always a hit at bbqs......good way to use fresh veggies from the garden and very simple to throw together ahead of time :-)

For this salad, I use European or Persian cucumbers because they look nicer, have almost no seeds, and have very thin skin. You can use thick-skinned cucumbers, but you'll need to peel them or leave strips and remove the seeds if you don't like them.
