This recipe is from my wife's nannie. I make it every Christmas and it goes very fast. It's basicilly a really good tasting fruitcake substitute. It is easy but not quick so take the time to fix it. You will be surprised and amazed. Enjoy.

Ingredients

  1. 3 1/2 cupSelf rising flour
  2. 1/2 cupraisins
  3. 1 tspCinnamon
  4. 1 tspAllspice
  5. 1 cupMelted butter
  6. 1 tspBaking soda
  7. 1 cupchopped pecans
  8. 1 ozChopped cherries mix
  9. 1 tspGround cloves
  10. 1 tspNutmeg
  11. 2 cupGranulated sugar or substitute
  12. 3 mediumeggs
  13. 1 1/2 cupapplesauce

    Preheat oven to 350°F

    In small bowl, mix applesauce with 1 teaspoon baking soda. In seperate bowl, mix nuts, raisins and cherries. In seperate bowl, mix flour, 1 teaspoon cinnamon, 1 teaspoon nutmeg, and 1 teaspoon allspice. In large bowl, cream butter, sugar and 3 eggs. Add flour mixture, mixwell; add applesauce mixture, add fruit mix mix well. Pour into well greased and floured stem or bundt pan and bake at 350 for 1 hours 15 minutes. cal 146 per slice, total fat 7.0 g, Sat 2.6 g, cholesterol 10.0mg, sodium 229.0mg, total carbs 19.2g, sugar 10.5g.
