I really love Irish potatoes and my friends had just invited me to make something new for them.
Cooking Instructions

Pill off outer cover of Irish potatoes

Slice them as light as possible
- 3
Add warm water to flour.Stir it gently till it becomes fine. Add food colour, salt and little baking powder to the mixture. Stir it till the colour becomes uniform.

Put sliced potatoes to the mixture as you turn them evenly.

Gently put the potatoes in hot oil.Let them cook then Turn them after two minutes.(They will be ready when they change their colour and become loose from each other).

Save the Viazi Karia with soft drinks or blended juice. Bonne appétit !

St Paddy's Day is just around the corner and it almost slipped my mind! Well, almost. Fortunately, there are lots of kind souls who reminded me of this upcoming holiday. So, lots of greens and Guinness stout? No, not really tho. But I decided to share a couple of Irish recipes with you lovely people.The 1st (which is this) is actually a potato pancake recipe. I can say that this is in between a rosti and a pancake due to the savory taste with crispy-doughy texture. Besides adding some nutmeg, I didn't do much to a traditional boxty recipe. I certainly do not want some angry Irish knocking at my door. Lol!I love to serve my boxty with a French fried egg on top. You can serve it with a poached egg, soft boiled, scrambled eggs or a simple sunny side up. You can even add some bacon on the side as well. It is totally up to your preference. My youngest son , school teacher had made this an assignment for earth week.... had the options to make them if we could, but she also made a video for the class and it was a writing assessment on the steps on how to make them... so we was lucky to have everything on hand to try and make these cookies..... food coloring is something I don’t keep on hand bc I don’t like cooking or baking with it, but I was very lucky to find some hiding in the back of my cabinet. He was excited that we could make these and add pictures to his assessment slide show he had to do if we made them.I love earthly things, we do things all year not just on earth day /earth earth week.
