Nice for breakfast

My daughter requested a banana cupcake for her birthday this year and this is what I came up with. Everyone really enjoyed them with their caramel white chocolate cappuccino.

It also works if you use a muffin pan, then you end up with 12 banana muffins instead of one loaf :-) and I've been known to occasionally throw in a handful of lemon and orange peels (the ones that are already sweet)

My girls like this recipe when we have overly ripe bananas to use up and we're tired of banana bread. Makes large yummy muffins that are good for a dessert or quick breakfast.

i personally do not care for bananas however my son and my husband likes them. this is their favorite banana dessert ever!

We had extra bananas that didn't get eaten before starting to brown and no one in my house will eat them with brown spots. I didn't want to make banana bread again and it was breakfast time. I looked up banana pancake recipes, but they all looked so flat and dense. I also didn't want am overwhelming banana flavor which I think something that is just "bananas and eggs" would be. So, I decided to just modify my go-to pancake recipe with bananas as the base and they turned out great.On a side note, this is a great recipe to let the kids help with! My 3 year old loves spending time cooking with Mama. He feels like a real chef when he's cooking and guiding him through the measuring and mixing of ingredients while explaining what each ingredient does is a great way to teach him math and science at the same time.

I usually double this recipe, making 1 loaf and 1 batch of muffins. The recipe is very versatile. You can add more banana if you'd like to increase the banana flavor. I have also made it with add-ins (choc. chips, dried cranberries, chopped walnuts). Stir in after flour.
