Hey guess what?! I had some leftover chicken breasts and we needed a quick supper. We ate this hot in tortillas as wraps but will be fantastic tomorrow as a tasty chicken salad for lunch. It would be a really good quesadilla filling too.

I love the combination of edamame and bacon, so I make this often.It also tastes great if it's seasoned with black pepper.It's delicious if you add some finely chopped processed cheese.If you want the edamame to have bright color, set aside 1/3 and mix them in at the very end to keep the color vibrant. When I was single and in hospital I got this delicious salad from another person who was in the same hospital room as me so I tried recreating it.My family (especially the children!) love it so I made it into a recipe.It's best to boil the green beans until they seem a little overdone so that they are soft and easier to eat.The bacon seems easier to eat for children if it's not fried. This recipe is similar to that of the restaurant I work at, but I've tweaked it a bit to suit my taste.

My mother serves a sweet and sour bacon and avo dish as a starter. I have adapted it a little to make a full meal of it, delicious and easy to make.
