Ingredients

  1. 1 kgmatumbo
  2. Cooking oil
  3. 3big tomatoes
  4. 2large onions
  5. Garlic
  6. Ginger
  7. Green pepper
  8. Coriander
  9. Salt

Cooking Instructions

    Wash your matumbo(cows intestines)Before cutting.

  2. 2

    Put them in a cooking pot

  3. 3

    Add enough water and ginger. (ginger softens them)

  4. 4

    Cover your cooking pot and let them boil.

  5. 5

    When soft, ensure you drain the remaining water in a bowl.

  6. 6

    Shallowly fry the cooked matumbo in little oil.

  7. 7

    When almost brown, add the onions,galic,corriander,green pepper,and salt.

  8. 8

    Fry until the onions turn golden brown, then add the tomatoes.

  9. 9

    Allow the tomatoes to soften as you stir.

  10. 10

    When you get a thick paste from your tomatoes, your matumbo is ready. Serve with hot ugali.

    N/B...I always use fresh spices in my cooking.
