Spaghetti with cucumber sauce

Its summertime and I wanted to make a lentil dinner. Usually I make Lentil Stew but its too hot for that. So I wanted to do something else. I found this recipe in my Forks Over Knives cookbook called Spaghetti with Lentil Ragu. This "meat" sauce is based on that recipe. The recipe calls for diced tomatoes but I chose a can of crushed tomatoes to make a sauce. I also put the lentils through a blender to make the lentils more ground meat like . Topping it with cheddar cheese really finished it off perfectly. I hope you'll like it as much as my family did.

My grandma use to make this sauce all the time and freeze the left over for quick easy meals during the week. Sometimes I get crazy and add black olives, green pepper, red pepper and sun dried tomatoes for a chunky sauce.

Love Greek food but with a healthy twist! Also took an "after" shot - this is so good it was eaten quickly!

Basil sauce itself doesn't blend well with the pasta, but I didn't want to add so much oil.That's why I experimented with mixing in yogurt. It was a lazy Sunday. Me&friend woke up in starving tummies. We got our ass off bed,and hurry to nearest chicken noodle place. When we got there, it was sold out. Disappointed&Starved..We decided to cook breakfast by ourselves. And ta-daa! Much2 better than chicken noodle! ha ha!
