Cooking Instructions

Peel and wash the potatoes well. put in a large saucepan cover with water and cook on medium heat.. once it begins to boil add some salt and the boiled maize. cover and leave to cook until potatoes are cooked. do not over cook

Wash and boil the pumpkin leave for 10-15 mins. leave to cool then drain and blend to a smooth paste.

Peel, slice and fry the onions until they are golden brown and take them off heat.

When the potatoes are ready drain and add the pumpkin blend and mash together until smooth. adjust the seasoning and mix in the fried onions. serve hot.

Can be served with stews, curries and also vegetables
