All of my 7 year old students are making their parents a romantic roasted chicken dinner with a spicy mango salsa this evening. This was the first leg of their journey today. Excellent work kiddos!

This is a blend of 2 different recipes that I found on the internet. It goes well with chicken breast or thighs in a chipotle pepper or other spicy marinade. We use leftovers the next day with Cajun spiced tilapia.

I love salsa, but for school I had to pick a region in the U.S. My region was california with option of mango and pineapple, I am also making crab cakes to go with this, again recipe from my head. I can not use anyone elses recipe, they have to be original!

This is a simple colorful mango salsa it's easy to make . It's sweet spicy and delicious . Serve it with tacos or as salad .

My boyfriend made up this recipe on the fly. I added avocado for color.

I suppose it would be easier to put the tomatoes, bell pepper, etc. to a food processor and pulse for a few seconds. But since I don't have one, I have to do it the old-fashioned way--slice and dice them manually! I call this quick salsa because I just slice and dice vegetables that I found in my fridge. If you only have tomatoes and onions, that would work, too.

It's Salsa Week here in the O'Brien Shire so you know Habeneros are definitely on the roster! Just chop, simmer, chill and serve! If my 7 and 8 year old students can handle the heat - so can you! Great work kiddos! You do make your instructor proud!
