I love salsa, but for school I had to pick a region in the U.S. My region was california with option of mango and pineapple, I am also making crab cakes to go with this, again recipe from my head. I can not use anyone elses recipe, they have to be original!

Ingredients

  1. main ingredients
  2. 3 ozFresh pineapple small diced
  3. 3 ozFresh semi ripe mango small diced
  4. 1lemon juiced
  5. 1/2lime juiced
  6. 1 ozred and green bell pepper mix small diced
  7. 1 ozred onion small diced
  8. 1 ozgreen onion
  9. 1 clovegarlic chopped
  10. 1 ozSerrano small diced
  11. Dressing
  12. 1 ozwhite wine vinegar
  13. 1 tbsptabasco
  14. 1 tbspdijon mustard
  15. Garnish
  16. 1/2 ozcilantro choped

Cooking Instructions

30 mins
  1. 1

    Mix all of the main ingredients together.

    For dressing mix seperate bowl thoroughly.

  3. 3

    Add dressing to main ingredients thoroughly incorporated in mix. May not need all of dressing just to coat.

    Portions about 2 ounces for 5 people. Garnish with the cilantro on each.

    Add more Serrano or hotter peppers if you like more spicy, even heat in a pan just to warm up, if you dont like cold salsa!

Been cooking since 5 started with eggs just decided to go to school in culinary arts you all inspire me. My plating and recipes will get a lot better since I'm a perfectionist. I hope you all live what I share with you in the future. Update 2025 I am now head Chef of 2 restaurants 1 dry age steak house and the other a entire senior living community.
