Ingredients

  1. 300 gmsboneless mutton cut into small cubes
  2. 1large onion finely chopped
  3. 1large tomato finely chopped
  4. 1/2 tsphaldi
  5. 1 tspchilli powder
  6. 1 tbsplemon juice
  7. 1 tbspginger garlic paste
  8. 1/2 tspsalt
  9. 1/2 tspgaram masala
  10. 1 cupmaida
  11. 1 tspsalt
  12. 2 tspoil
  13. Lukewarm water to knead the dough
  14. 1/4 cupmint chutney
  15. 4eggs
  16. Few rings of onion for garnish
  17. 2 tbspmaida + 2 tbsp water. Mix into a smooth paste

Cooking Instructions

    In a cooker heat oil. Add cubed mutton pieces. Add salt, haldi, ginger garlic paste, red chilli powder, lemon juice and garam masala. Mix well. Add very little water.cover and pressure cook till meat is tender and water dries up.

    Knead the dough for rotis. Divide into 8 balls. Roll out the rotis and cook in a non stick pan only on one side. Remove and set aside.

    Beat the eggs. Add salt. Prepare 8 small omlette and set aside.

    Assembling : take one roti in a plate the cooked side up. Apply some mint chutney on the roti. Place a few cubes of meat in the centre. Sprinkle some chopped onion and tomatoes on it. Place an omlette on top. Roll the roti by tucking in the sides while rolling them up. Stick the edges with maida and water paste.

    Heat oil in a non-stick pan. Shallow fry the rolls by turning over till you get a nice golden colour. Garnish with mint chutney, shredded beetroot and onion rings. Enjoy!
