Ingredients

  1. Pork and marinade
  2. 2-1/2 poundporkloin
  3. 1/2 teaspoonground white pepper powder
  4. 1 teaspoonground sage
  5. 1 teaspooncinnamon sugar mixture
  6. 1 teaspoonground paprika
  7. 1 teaspoongranulated garlic powder
  8. 1 teaspoongranulated onion powder
  9. 1 teaspoonmustard powder
  10. 1 teaspoonground ginger
  11. 1/4 cuppeach brandy
  12. 1/3 cupextra virgin olive oil
  13. Stew and vegetables
  14. 10-1/2 ouncessorrel in a jar chopped
  15. 1 poundcarrots
  16. 2/3 poundpotatoes
  17. 1-1/2 cupchopped celery
  18. 1medium onion
  19. 1large cucumber
  20. 1-1/2 cupchicken broth
  21. 4 tablespoonsbutter
  22. 1-1/2 teaspoonpink Himalayan salt
  23. 1/4 cupall purpose flour

Cooking Instructions

    Cut the pork into manageable pieces. Add the spices except salt. Add the oil and brandy and put into a ziploc bag.

    Remove all the air from the bag. I used water in the sink to submerge the bag most of the way pushing the air out and sealing the bag. Set in the refrigerator for 3 hours.

    Wash peel and chop the vegetables.

    Here is the sorrel.

    Heat a deep pan. Add the pork and marinade. Add the onions and simmer for 2 minutes. Then add the sorrel.

    Now add the vegetables and stir. Now add the salt. Stir well and simmer 7 minutes.

    Add the broth and simmer 20 minutes.

    After 20 minutes liquids will increase. Add the butter. Simmer 20 minutes more. Add the flour stir in and let thicken. Cook for 10 minutes serve I hope you enjoy!!!!
