I was just wondering what to do with the papaya I had. This was a nice way to get the kids interested in Pawpaw.

Ingredients

  1. 2 cupsflour
  2. 2 1/2 cuppapaya
  3. 2eggs
  4. 2 teaspoonsbaking powder
  5. Pinchsalt
  6. 2and half cups of sugar (2 cups if you dnt want it too sweet)
  7. 1 teaspooncinnamon
  8. 3/4 cupvegetable oil
  9. 1 tablespoonorange juice
  10. 1/4 cupmixed fruits or raisins

Cooking Instructions

    Peel, and dice the papaya into cubes. Mix all the dry ingredients together.

    Beat the eggs and add the oil. Pour this into the flour (already mixed with the other dry ingredients)

    Add the mixed fruits and pawpaw. Mix very well. It will be like a dough at first but it will later get to a runny consistency.

    Pour into a bread loaf that is either greased or lined with patchment paper. Bake for about 50 minutes until a knife comes out clean. Leave to cool completely before slicing.

I made this today with very little adjustments. This cake/bread is perfect and looks just like the picture. I didn't have orange juice so I substituted lemon juice. I used my Kitchenaid mixer for mixing the complete cake/bread. I'm sorry I didn't post a picture but my family got to it first. My husband said "this is great". High praise from him since this is the first time he's eaten papaya! I'll be making another one soon!
