Ingredients

  1. 2 cupsflour
  2. 2 teaspoonsbaking soda
  3. 1/2 teaspoonfine sea salt
  4. 1 1/2 teaspoonground cinnamon
  5. 1 1/4 cupvegetable oil
  6. 1 cupgranulated sugar
  7. 1 cupbrown sugar
  8. 1 teaspoonvanilla
  9. 4large eggs
  10. 3 cupsgrated carrots
  11. 1/2raisins
  12. Nuts if required

Cooking Instructions

    Mix oil, sugars & eggs one at a time in a bowl and whisk until combined.

    Mix other dry ingredients in a bowl.

    Fold dry ingredients into wet ingredients in 3 portions.

    Add carrots and raisins.

    Divide batter into two, grease two 9" pans and bake until a toothpick inserted in the middle comes out clean.

    Cool & decorate with icing of choice (I used ermine buttercream), garnish with carrots.

    You can serve plain too. Enjoy.
