Ingredients

  1. 2mini cucumbers, diced
  2. 1bell pepper, diced
  3. 1 can (15 oz)chickpeas, drained and rinsed
  4. 1/2red onion, finely chopped
  5. 1 tspground cumin
  6. 1/2 tsponion powder
  7. 1/2 tspgarlic powder
  8. 1/2 tspsalt (or to taste)
  9. 1/4 tspblack pepper (or to taste)
  10. 1/2 tsppaprika
  11. 2 tbsplemon juice
  12. 3 tbspolive oil
  13. 1 tbspbalsamic vinegar
  14. 2 tbspfresh cilantro, chopped (optional)
  15. 1/4 cupfeta cheese, crumbled (optional, for topping)

Steps

    Dice the cucumbers and bell pepper. Finely chop the red onion and cilantro (if using).

  2. 2

    In a large mixing bowl, combine the chickpeas, cucumbers, bell pepper, red onion, and cilantro.

    Add the cumin, onion powder, garlic powder, paprika, salt, and pepper to the bowl.

  4. 4

    In a separate small bowl, whisk together the lemon juice, olive oil, and balsamic vinegar. Pour the dressing over the salad and toss gently to combine.

  5. 5

    Serve immediately or refrigerate for 30 minutes to allow flavors to meld. Top with crumbled feta cheese just before serving for added richness and flavor.
